Caviar Storage
Caviar will remain fresh for 18 months from the date of manufacture if it is not closed and stored at temperatures below 32ºF (0ºC). The date of manufacture is indicated on the bottom of each can. Storage time will be reduced if stored at a higher temperature. Caviar should not be stored at temperatures above 37ºF (3ºC). We recommend storing caviar in the coldest part of your refrigerator (usually a meat section). It is not recommended to store caviar in the freezer, because after thawing, the grains may burst, which will lead to more juice in the caviar. Opened jars should also be stored in the refrigerator. After opening the jar, the freshness time can vary from several days to several weeks, depending on whether bacteria are introduced into the jar. To prevent bacteria from entering the jar, serve the eggs only with a clean spoon and do not add other products such as crackers.
